Vegan Meatballs with Sauce
A delicious replacement for meat! You can have the meatballs, but without the meat! Easy to cook and also very healthy for all you out there having a high cholesterol. I also tried it together with pasta and decorated with parmesan, it’s a great option!
Ingredients for the meatballs:
- 300 g of red beans, boiled
- 300 g of chickpeas, boiled
- 1 medium yellow onion, minced
- 1 handful of minced dill
- 100 g of steamed rice
- 1 medium carrot, shredded
- 50 g of beetroot, shredded
- 50 g of celery root, shredded
- salt, white pepper
Ingredients for the sauce:
- 2 medium red onions, minced
- 3 garlic cloves, crushed
- 10 tablespoons of tomato paste, or the pulp from 5 large ripe tomatoes
- condiments
Preparation:
- Mix the ingredients for the meatballs by using a food processor. Form tiny spheres and cook them in a pre-heated oven at 180 C for approximately 30-40 min.
- For the sauce, fry in one tablespoon of olive oil the onions and garlic for approximately 4 minutes. Add the 10 tablespoons of tomato paste (or fresh tomatoes, depending on what you have) and fry, stirring gently for approximately 10 minutes. Add salt, pepper and condiments to taste.
- You can also serve it with pasta (optional).
