Tomato Soup with Zucchini
A delicious soup, which took me 30 minutes to cook. I prefer this kind of soup because it has a light but flavored composition. It is also perfect in one of those days when you feel that you’re coming down with a cold, served hot of course!
Ingredients:
- 1.5 kg tomatoes;
- 60 g noodles;
- 1zucchini, 250-300 g;
- 2 small onions;
- 1 parsnip;
- a few leaves of parsley;
- 2 tablespoons olive oil;
- 2 mushroom flavored bouillon cubes;
- salt;
- pepper;
- 2 teaspoons of sugar.
Preparation:
- Cut the tomatoes and the zucchini into small pieces and add them together with the whole onions and parsnip in 1.5 liters of water.
- Add salt, sugar, oil, and the bouillon cubes over taste and let them boil at low heat for 15 minutes.
- Remove the parsnips and after the composition cools, mix it and strain it.
- Add the separately boiled noodles to the strained composition and add salt and pepper over taste.
You can also add freshly chopped green parsley and a dollop of yogurt, it gives it a great flavor!
