Smoked Salmon Soup
I consider this a great dish to serve at lunch time. It’s a delightful dish containing salmon and vegetables, a healthy combination. The ingredients I used are for 8 servings, it took me approximately 20 minutes to cook, and each serving has 240 kilocalories. I hope you will enjoy it as much as I did!
Ingredients:
- -1 cube of butter
- -2 large leeks cut in half, then into thin slices
- -1 leaf of laurel
- -1 kg of white potatoes, cut into small cubes
- -1l of chicken broth
- -100 ml of sour cream
- -200 g of smoked salmon, cut into strips
Preparation:
- Heat up the butter in a large pan and add the leeks and laurel leaf.
- Fry over low heat for 8-10 minutes or until the leeks are very tender, then add the potatoes and stir until they are covered in butter.
- Add the chicken broth and sour cream and boil over low heat for 10-15 minutes until the potatoes are very tender.
- Add two-thirds of the smoked salmon, mix the composition and add salt and pepper to taste. Serve the soup in bowls, and add the remaining salmon at every serving.
