Oriental Summer Salad
A delicious dish, perfect for serving during spring and summer, when the potatoes are sweeter! The ingredients I used for this dish are for 2 servings. If you want a more protein-rich dish you can also add slices of boiled eggs (some people prefer it that way).
Ingredients:
- 8 medium steamed potatoes;
- 100 g of pitted black olives;
- 200 g of chopped peppers (red, yellow, green and orange);
- 300 grams of tomatoes, chopped;
- 2 medium cucumbers, sliced;
- 1 onion, chopped;
- minced fresh parsley and dill.
Preparation:
- Mix the ingredients in a bowl by adding salt and pepper to taste.
