Omelet with Spaghetti
This is a delicious, healthy and full of protein breakfast. It took me 30 minutes to prepare and the ingredients I used are for 4 servings. You can also add to the composition some olives, by preference.
Ingredients:
- 2 tablespoons of olive oil
- 1 garlic clove, crushed
- 1 onion, minced
- 2 Zucchini, grated
- 2 tablespoons of parsley, chopped
- 300 g of cheese sauce
- 200 g of spaghetti, boiled
- 2 eggs
Preparation:
- Heat up the oil in a frying pan and fry the onion and garlic for approximately 2-3 minutes. Using your hands, squeeze the grated zucchini as much as you can (so that there isn’t any liquid left inside them). Add them to the frying pan and fry them for approximately 3-4 minutes. Put the mixture in a separate bowl.
- Add the parsley, the cheese sauce, spaghetti and salt and pepper to taste while stirring gently. Beat the eggs and add them to the bowl.
- Heat up the remaining oil and add the mixture of spaghetti. Level it with the back of a spoon and fry over medium heat for 3 to 5 minutes.
- Preheat the oven for 2-3 minutes on grill option, and place the pan inside the oven for approximately 5-8 minutes.
- Before removing it from the pan, wait for it to cool, so that you can easily cut it.
