Muffins with Figs and Almonds
These should be called “muffins for any time of the day” because you can serve them at any time, either with coffee, either as a dessert, or together with a scoop of ice-cream. The ingredients I used are for 12 servings and it took me approximately one hour to prepare.
Ingredients:
- 175 g of flour mixed with 1/2 teaspoon of baking powder
- 175 g of soft butter
- 175g of sugar
- 175g of ground almonds
- 1 tablespoon rose water
- 3 large eggs
- 5 ripe figs
- 1 handful of almond flakes
- powdered sugar, for decorating (optional)
Preparation:
- Preheat the oven at 180 ° C. Place the special baking paper forms in a tray for muffins. Mix by using a food processor the flour, butter, sugar, ground almonds, rosewater and eggs until you get a homogeneous mixture.
- Divide the mixture between the spaces on the tray (in my case 12).
- Cut the figs into small cubes and place them in equal quantities in each space together with the mixture.
- Sprinkle almond flakes on top. Place the tray in the oven for approximately 40 minutes.
- You can add powdered sugar on top of them in order to decorate.
