Muffins with Bananas and Nuts
Easy to cook, these muffins can be kept for a longer period, maintain fresh if you keep them in a box or covered in foil. This recipe took me 45 minutes to prepare and the ingredients I used were for 12 servings.
Ingredients:
- 120 g of butter at room temperature
- 200 g of brown sugar
- 2 eggs
- 250 g of flour
- 1 teaspoon of bicarbonate of soda
- 1/2 teaspoon of salt
- 70-100 g of chopped nuts
- 3 bananas and a half for decorating (optional)
- 1 tablespoon powdered sugar (optional)
Preparation:
- Preheat the oven at 180 c. Mix the butter and sugar together until you get a creamy consistency. You can use a spatula, mixer or food processor.
- Add to the mixture the 2 eggs and mix them together.
- In a separate bowl mix the flour, salt, and bicarbonate of soda.
- Incorporate the flour. Stir gently until you get a homogenous composition.
- Press the bananas with a fork in order to get a banana puree (this is the way I do it). This operation can be done either with a fork or in a blender or a food processor.
- Add the nuts and bananas to the composition and mix until homogeneous dough is obtained.
- Use a tray for muffins by adding the special baking paper in each space. Pour the composition in each space. (In my case 12)
- You can also take one banana and slice it in 12 and add it on top of each muffin.
- Bake for approximately 30 minutes. You can add powdered sugar for decorating.
