Classic Crêpes
I consider crêpes to be the perfect dessert! They are easy to cook and delicious!
You can add grated rind of lemon or orange, a pinch of cinnamon or chopped herbs to the composition, by preference! I recommend you to cook them in pans specially designed for crêpes so that they don’t stick to the pan.
Ingredients:
- 140 g of flour
- 200 ml of whole milk
- 2 eggs
- 25 g of butter, melted, plus extra for greasing
Preparation:
- Add the flour in a medium sized bowl together with a pinch of salt. Make a small dent in the middle where you will add the eggs, then pour the milk mixed with 100 ml of water in a thin thread. Make sure you stir continuously while adding the ingredients in order to obtain a homogenous composition!
- Leave the composition to rest 30 minutes and then add the butter.
- Heat up the pan over medium heat. Grease it with a thin layer of butter.
- Using a ladle, pour about 2 tablespoons of batter for pancakes.
- Tilt the pan so that the surface gets coated evenly. The goal is to get enough composition to obtain a thin pancake.
- Fry it for approximately 45 seconds on the first side and then turn it on the other side for about 30 seconds.
Tip: I normally add jam or chocolate on the surface of the crêpe and then roll it. It tastes delicious!
