Cauliflower and Parmesan Soup
The perfect dish to serve during winter. It warms you up! The ingredients I used are for 4 servings and it took me approximately 30 minutes to cook.
Ingredients:
- 1 large minced onion
- 2 garlic cloves
- 1 tablespoon of butter
- 1 large loaf of cauliflower
- 750 ml of milk
- 50 g of grated Parmesan cheese
- chives and crisp bread
Preparation:
- Fry in a pan the minced onion together with the 2 mashed cloves and a large spoon of butter until they soften.
- Add the cauliflower chopped in big chunks, and then pour 750 ml of milk and simmer everything on low heat until the cauliflower is softened.
- Mix everything in a blender until you obtaining a cream. Add 50 g of grated Parmesan cheese and sprinkle chives cut into long pieces.
I recommend serving with crunchy bread.
